This unlikely brunch dish was an out and out winner in our house. Rich declared it his favourite breakfast of all time; which having been fed all sorts of weird and wonderful (mostly wonderful) things like Indian Huevos Rancheros, Nduja Toast and of course, my egg cups in all their many permuatations.
Having made vast vast amounts of saag paneer for this piece for The Debrief thanks to my mother-in-law relinquishing use of her own kitchen, I was left with quite a lot spare.
I'm not one for wasting food - ever - so dreamt up this little dish for a very speedy little Sunday brunch when we were rushing about at the weekend.

It's a lovely little dish in its own right, but if you have any left over from making it (or from a takeaway!) then I wholeheartedly urge you to whisk it up with a couple of eggs and pop it in the trusty microwave for about two minutes. Eggs and Indian spices are always happy bedfellows, so it shouldn't really be a surprise that this works so well; the result is a warm, comforting bowl of soothing goodness. Top with a knob of butter for a treat.
