Veganuary: the conclusion

A *little* but late, but better late than never. So, I lasted until an ill-timed end of January trip to Paris in the vegan stakes, but show me a person who can journey to France and resist the lure of steak frites and smelly cheese and I'll show you a liar.

I thought I'd leave you with a few of my favourite genuinely tasty recipes that got me through those dairy-free weeks...

HelloFresh Thai Mussaman Rice with Aubergine and Mushroom

Really delicious, filling and you don't notice the lack of meat thanks to the range of difference textures and the nutty crunch from the peanuts and cashews.

Don't let the thought of tofu put you off. This is flavoursome and a great addition to any curry night.

In all seriousness, Veganuary was definitely worth doing and was really interesting. Of course I missed eggs, butter and yoghurt that tasted like actual yoghurt but aside from eating out I didn't miss meat too much - even though I love it. A few weeks on and I find that whilst we do still eat eggs, dairy, meat and fish at home we eat far far less than before and probably only have meat for dinner once or twice a week now - and no complaints.
