Cocktail O'Clock: Coconut Mojito
This coconut mojito is so nutritious is could *almost* pass as healthy. I'm no fan of a standard mojito; all that added sugar is terrifying and there's not much else to it. This coconut version swaps the sugar syrup for Vita Coco coconut water, which I LOVE even on its own. Whilst the sugar content of coconut water is still pretty high, so you shouldn't go downing it like water, they are natural sugars and there is loads of potassium and electrolytes which are they key to proper hydration. When muddled with lime, mint and a decent slug of white rum the result is much more refreshing and less sweet than a traditional mojito and you can totally believe you're on a tropical beach and not at home in your living room at 3pm humming Club Tropicana.
Here's the recipe:
Double shot white rum
Juice of 1/2 a lime
Handful of mint
Handful fresh coconut
100ml coconut water
Ice (I didn't have any!)
Throw it all into a cocktail shaker, give it a good smash around with some kind of utensil to release the mint flavour then shake it all up. Pour and drink!
