Benedict Cups


Eggs Benedict without the muffin can be rather a soggy affair, but these mini versions manage to be low carb, easy and still completely rich, satisfying and not at all soggy.

Start by lining a muffin tin with ham (or smoked salmon)...

Drop in some wilted spinach for some veggie goodness:

Then crack an egg into each well and pop into the oven for about 10 mins...

For a weekend treat I added a teaspoon of homemade bearnaise sauce for the last three minutes or so of cooking time (of course, it should be hollandaise but I had some bearnaise hanging around from a recent steak dinner and the addiction of tarragon is only ever a good thing)...

Bearnaise and Hollandaise are both easy to make if you use this all in one method. With any method anyway if it splits, you can always cheat and add the tiniest drop of cold water to bring it all back together.

Breakfast is served.
