Lemon, Mushroom & HECK Chicken Sausage Bake


Ignoring the slightly burnt bits (I went out and forgot this was in the oven), what we have here is a ridiculously easy one-pot dinner that requires practically no cooking skills or time that almost everybody will enjoy. And the good news is: these are ingenious HECK Chicken Italia sausages coming in at a mere 36 calories PER SAUSAGE. Amazing. That means two of you can totally eat the whole pack of 10 and still be shy of 200 calories; they're also low fat and 0.5 syns per sausage for anyone on Slimming World.

Oh, and 5% of each pack purchased this month goes to the Movember foundation supporting men's health issues so WIN WIN. You might even find they're called CHECK rather than HECK right now, to encourage menfolk to examine themselves in the name of testicular cancer - they're the same tomato and mozzarella infused chicken sausage product though.

Anyway, if you should so wish you can make this super simple supper by chucking a whole packet of Heck Chicken Italia sausages in a large dish along with some thinly sliced new potatoes, mushrooms, 1/2 a lemon, loads of black pepper and rather more white wine than olive oil. Add some good chunks of garlic, season well and then abandon in the oven. 30-40 mins will probably do you rather than this 1-hour-plus disaster (it still tasted nice).

Serve with freshly torn basil. I made some Hawksmoor style creamed spinach to have on the side too. Yum!

*Heck very kindly sent me these Chicken Italia sausages to play around with, but I promise I genuinely like them ;)
