Jamie Oliver's Asian Stir-Fried Veg Crispy Sesame Noodle Omelette
I wrote a piece for MailOnline (I know, God strike me down) recently where I had to use Jamie Oliver's new book, Everyday Super Foods to accompany his new TV series and I had to cook three meals a day for a week. You can see how I got on here if you like, but I really wanted to share one of my favourite recipes that I tried...
He calls is Asian Stir-Fried Veg Crispy Sesame Noodle Omelette, which is rather a mouthful, but does a good job of describing it. I've never thought of putting noodles in an omelette before - much less crispy ones - even though my go-to leftovers dish for any spaghetti is straight into a frittata. See here for more on that.
Anyway, back to the matter in hand - I'm not really very good at Chinese flavours, so I loved making this as it was such a change. It's super easy and the recipe may well go up on the C4 website if he makes it on the TV show. If not, buy the book as it's really good and actually not superfoody in a worthy, weird way at all.
You'll need these ingredients, though the veggies are interchangeable. Also some soy sauce and sesame seeds, not pictured
Essentially, you cook the noodles and stir fry the veg in sesame oil. Remove both from the pan and get some aromatics going (ginger, garlic etc) then crisp up the noodles. Pour over egg mix with a bit of water (great trick) and cook into an omelette. Scatter the veg over and season with lime, soy, onion and sesame seeds. All for 392 calories and about 10 minutes of your time.
